This recipe adds a different weapon to the BBQ arsenal. I choose to use coffee to add a richness and depth of flavor that normal rubs and sauces don’t bring.
Red Eye Porter BBQ Sauce
1 lg white onion
1 lg red onion
3 cloves garlic
1/4 C tomato paste
1 bottle porter
2 shots of espresso
2 C orange juice
1/2 C brown sugar
1/2 C molasses
3/4 C apple cider vinegar
1 tsp liquid smoke
1/2 can chipotle (or more to taste)
- Caramelize the onion in 1-2 T oil
- add all remaining ingredients and simmer for about 30 min
- blend until smooth
