Yes, I know that March is a weird time to post BBQ recipes. So what? With the bizarre weather that we have been having, there have been about 2 days each week that have been warm enough to stand outside and fire up the grill or smoker.
This recipe adds a different weapon to the BBQ arsenal. I choose to use coffee to add a richness and depth of flavor that normal rubs and sauces don’t bring.
Red Eye Porter BBQ Sauce
1 lg white onion
1 lg red onion
3 cloves garlic
1/4 C tomato paste
1 bottle porter
2 shots of espresso
2 C orange juice
1/2 C brown sugar
1/2 C molasses
3/4 C apple cider vinegar
1 tsp liquid smoke
1/2 can chipotle (or more to taste)
- Caramelize the onion in 1-2 T oil
- add all remaining ingredients and simmer for about 30 min
- blend until smooth
Yes, it’s just that simple. This sauce has it all. There is smokey, sweet, spicy, and richness that make it complex yet agreeable to most palettes. This sauce is very versatile and can be used on just about anything that you would smoke or grill. The orange juice adds a sweet element and lightness that make it the friend of most meats and even tofu.
